I'd eaten South Indian Style Fish Curry in a Mumbai (formerly known as Bombay) restaurant when in University and have been wanting to cook it at home for some time now. I was thrilled when my Mother-in-law sent me the recipe she had! She got it years ago from her good friend Annama. The tamarind in this fiery dish gives it a lovely tangy flavor that goes perfectly with plain boiled or steamed rice. That in fact, is how it is traditionally served. Enjoy!
Doi Maach - Bengali Fish in Yogurt Sauce
As a new bride, my Mother-in-law got this recipe from my Father-in-law's Kakima (aunt). Needless to say, it is sufficiently tried and tested! For Doi Maach, you can use any fish with a firm, white flesh but I like Rohu - a kind of carp - best.
The fish is first marinated in yogurt and a mix of spices and then cooked in mustard oil - in typical Bengali (from West Bengal in India's east) style. Serve Doi Maach with piping hot plain boiled or steamed rice.
Care for some Kofta?
Though the word 'kofta' means pounded or minced meat in Persian (kofteh), its Hindi 'adaptation' is used to describe balls made from both minced or mashed meat or vegetables. In India, koftas are made with all kinds of ingredients, seasoned with different spice combinations. They are then either fried, grilled or simmered in a sauce to create various delicious dishes.
If you fancy a curry, try Kofta Curry, meatballs simmered in a tasty North Indian gravy or Malai Kofta , vege-balls in a rich, thick sauce. Want something exotic? Make some Nargisi Kofta .
